This initiative aims to disseminate scientific knowledge about functional foods, promoting an educational and accessible approach for the general public. The first edition of the primer addresses essential topics related to functional foods that were covered in the course (class of 2023.2), providing information about their health benefits. Each volume focuses on a specific component, highlighting the importance of carotenoids, isoflavones, phenolic compounds and flavonoids, dietary fiber, essential fatty acids, and probiotics and prebiotics. This volume focuses on carotenoids, natural pigments found in fruits and vegetables, particularly their antioxidant role and contribution to eye health.
